A YUMMY Recipe!

I generally don't LOVE cooking (always feel I'm in a "cooking rut"), but I was recently inspired after reading on of my fav blogs, Modkidboutique! The fabulous author, Patty has also created the most wonderful cooking blog: CookIt BlogIt!

I couldn't wait to post a recipe to share! I made this yummy dish last night...it was a huge hit here at the Wise household! Cheezy (not dorky, but made with lot's of cheese!) enough for the kids & made with gorgeous fresh tomatoes, so delicious! I love late Summer tomatoes & in my opinion, Georgia has some of the very best! :)

Baked Ziti with Fresh Tomatoes

Ingredient List:

*1 Pound Fresh Ground Beef
*1 Cup Chopped Fresh Onions
*3 Pounds Fresh Plum Tomatoes, Peeled, Seeded & Chopped (About 15 Tomatoes)
*1-1/2 Teaspoon Salt
*1 Teaspoon Dried Basil
*1/4 Teaspoon
*8 Ounces Uncooked Ziti Pasta
*2 Cups (8 Ounces) Shredded Part-Skim Mozzarella Cheese, Divided
*2 Tablespoons Grated Parmesan Cheese

Step 1. Wash & rinse tomatoes





Step 2. In a Dutch oven, cook the beef & onion over medium heat until meat is no longer pink; drain.





Step 3. Stir in the tomatoes, salt, basil & pepper. Reduce heat to low; cover & cook for 45 minutes, stirring occasionally.







Step 4. Cook the ziti according to package directions; drain.



Step 5. Stir in the sauce & 1 cup Mozzarella cheese.



Step 6. Transfer to a greased 13x9 baking dish; sprinkle with the Parmesan & remaining mozzarella cheese.





Step 7. Cover & bake at 350 degrees for 15 minutes. Uncover; bake 15 minutes longer or until heated through.

**Add some yummy garlic toast & a salad...VIOLA!
